Mom's Cranberry Christmas Cake

3 T. Butter
1 C. Sugar
2 C. Flour
1 C. Milk
3 tsp. Baking Powder
1/4 tsp. Salt
2 C. cut up Cranberries

Beat together all ingredients. Fold in berries. Spread evenly in 8 or 9 inch square pan. Bake (mom didn't have how long or what temp. I did 350 degrees for about 30 minutes, I think).

Serve warm with following butter sauce:

1 C. Sugar
1 T. Flour
1/2 C. Butter
1/2 C. Cream
1 T. Vinegar
1 tsp. Vanilla

Mix flour and sugar. Place everything except vanilla in saucepan. Heat, beating well, until hot and bubbly. Add vanilla and serve warm over cake.


We love this cake. Even dogs love this cake (but don't feed it to your dog...mine just stole the cake off the table). Good luck and Merry Christmas!
